Dark Chocolate Amaretto Cookies

The Great Food Blogger Cookie Swap of 2015 is here and it's going to be a delicious day of recipes for you and yours to enjoy now or later! All of the bloggers who are joining us today have donated money to Cookies For Kids Cancer! Cookies for a good cause? That makes the indulging a little bit better, am I right?

Thanks OXO for the great measuring set!

Because I feature a lot of cocktails on my blog I knew I wanted to add something boozy to the cookies that I created. I played around with bourbon and finally landed on amaretto due to my secret love affair with the liquor

2 eggs
1 cup hot chocolate
1 cup butter
1 cup sugar
2 tsp vanilla
1 tsp salt
2 cups flour
6 tbsp amaretto
2 tbsp brown sugar
1 3/4 cup dark chocolate chips
4 tbsp milk

Preheat oven to 350 degrees F. In a large mixing bowl add butter, sugar, eggs, vanilla and 4 tbsp amaretto. In a separate bowl mix flour, cocoa and salt. In a median sauce pan over medium heat add 1 cup of dark chocolate chips, milk, and 2 tbsp amaretto until melted.  Slowly mix all ingredients together and then fold in 3/4 cup of dark chocolate chips. Roll dough into small balls on a baking pan and out in the oven for 12-14 minutes or until cooked.

I definitely recommend enjoying with a cup of coffee and fresh baked cookies (or nuke in the microwave for about 5-10 seconds so the chocolate chips are gooey).

XOXO, Jacque
